Over the years I have struggled to know how much to plant for my family. Some years I don’t have enough cucumbers and other years people dodge me in the hall at church so they don’t have to say, “No!” one more time!
This is a guideline from Rodale’s Garden Answers: Vegetables, Fruits and Herbs
HOW MUCH TO PLANT
Broccoli-5-10 plants per person, fresh eating—10-20 plants per person, freeze
Beets-5-10 feet of garden row, fresh, 2 plantings
Beans-10-15 bush bean plants per person, fresh eating—20-30 plants per person, freeze
Carrots-20-40 carrots per person, fresh eating
Cauliflower-5-10 plants person
Cucumber-1-2 plants per person
Lettuce-8 plants per person, staggered planting
Melon-1 plant per person
Pea-20-40 plants per person per planting
Peppers-2-3 plants per person
Radishes-2-3 small successive plantings
Spinach-10 plants per person per planting
Squash-1 plant per person
Tomato-2-4 slicing plants per person, minimum 6 plants per person canning
